3 Breakfast Game Changers: Overnite Oats

1. Peanut Butter Banana

  • 1/2 banana, mashed
  • 2 tablespoons of peanut butter, creamy
  • 1/4 cup of nonfat Greek yogurt, plain
  • 3/4 cup almond milk, unsweetened
  • 1 tablespoon of honey
  • 1 teaspoon of vanilla extract
  • 1 cup of oats, rolled
  • 1 tablespoon of chia seeds
  • 1 teaspoon of cinnamon

Instructions

  1. Mash the banana is a large bowl
  2. Add all wet ingredients to banana and mix until smooth
  3. Then add dry ingredient and mix again.
  4. Place in refrigerator, cover for at least 2 hours.  Serve cold.  (Stays good in refrigerator for up to 3 days)

 

2. Strawberry Cheesecake

  • 1/2 cup of nonfat Greek yogurt, plain
  • 3/4 cup of almond milk, unsweetened
  • 1 tablespoon of honey
  • 1 teaspoon of vanilla extract
  • 1 cup of oats, rolled
  • 1 cup of strawberries
  • 1 tablespoon of chia seeds
  • pinch of salt

Directions

  1. Put strawberries, almond milk,  greek yogurt into a food processor or blender.  Mix on high until fruit is a puree.
  2. Place puree in a large bowl and add the rest of ingredients.  Mix well with a spoon.
  3. Cover and put in refrigerator for at least 2 hours. (Will stay good in refrigerator for at least 3 days)
  4. You can top with crushed graham crackers and strawberry jam

3. Blueberry Muffin

  • 1/2 cup old-fashioned oats
  • 1/2 cup unsweetened vanilla almond milk
  • 2 tsp. brown sugar (not packed)
  • 1 packet no-calorie sweetener (like Truvia)
  • 1/8 tsp. vanilla extract
  • 2 drops almond extract
  • Dash cinnamon
  • Dash salt
  • 1/2 cup blueberries (fresh or thawed from frozen)

Directions:

  1. In a medium jar, combine all ingredients except blueberries. Mix thoroughly.
  2.  Stir in blueberries.
  3. Cover and refrigerate for at least 6 hours, until oats are soft and have absorbed most of the liquid
